Dang Good Pie

Julie asked me what a Dang Good Pie was, so I thought I’d share the recipe here. It’s a family recipe.

Dang Good Pie

3 eggs, slightly beaten
1 1/2 cups sugar
1 stick margarine (I use unsalted butter)
2 Tbsp. flour
1 small can or a heaping cup of flaked coconut
1 15 1/4 oz can Crushed Pineapple (drained but not dry)
1 large, unbaked pie shell

Mix eggs, sugar, margarine, and flour until smooth. Add coconut and pineapple. Mix or stir well. Pour into unbaked pie shell.

Bake at 375 degrees for 30-40 minutes (usually 40 minutes). May need to cover crust edges if they brown before pie is done.

This pie browns nicely on top, so unless you just want to, a topping isn’t necessary.
